Harvest time: The harvest takes place manually in crates in October.
VINIFICATION: alcoholic fermentation takes place at low temperatures (12 ° -15 ° C) to keep all the primary aromas of Malvasia extracted from the skins. This is followed by 6 months of aging on the fine lees.
AGING: 20% of this wine sees a 2-month passage in medium toasted French barriques from the Allier region.
REFINEMENT IN BOTTLE: 6 months.
