The white and red grapes are vinified separately and the preparation of the base takes place at the end of fermentation.
The Pinot Noir grapes are fermented in contact with the peel for the time necessary to obtain a rosé base wine, then used to give the final product a more or less intense color.
When finished, we will have characteristics with a fresh and savory taste; fine and broad odor; intense foam.
-Vinification: 75% destemmed pajamas with cold maceration and 25% in press.
- Total alcohol content: 12.63% vol.
- Total acidity: 6.8 g / l.
- Extract: 25.5 g / l.
-Fine aging: 28 months on the lees.
The presence of Pinot Noir gives a body and a vigor that allow you to savor it with salami and sausages, with risottos with porcini mushrooms and asparagus, with eggplant parmigiana, with tasty fish soups, lamb or veal, frogs and snails.
