Less intense straw yellow with greenish reflections, very fine and persistent perlage, almost creamy, firm bouquet of ripe fruit, accompanied by delicate notes of white flowers and even toasted dried fruit (almond, hazelnut): to the taste, a pleasant sapidity and freshness harmonize with an innate softness that recalls the delicate sensations of silk.
- Vinification: 14% fermentation and aging in barriques for 5 months and 84% in steel.
- Total alcohol content: 12.00% vol.
- Total acidity: 6.9 g / l.
- Extract: 22.9 g / l.
-Fine aging: 30 months on the lees.
Thanks to the lower pressure in the bottle, it is characterized by an extremely soft taste and by tactile sensations of creaminess.
It is ideal for the whole meal, but exceptional with baked pastas, delicate risottos and fish-based dishes (Sturgeon, Trout, Tench, Whitefish, Salmon). Also excellent with raw ham and not too mature cheeses.
It also goes very well with important dishes whose strong flavors are well balanced by its freshness.
